Doesn’t matter what you call it…I’ve got lots of it!


is that time of year again! Here’s this morning’s bounty. Tomorrow will
likely bring more. So, without further ado, I request (no beseech you
of) your favorite zucchini recipes.  (Vegetarian only, please) 

it is the stir fry that finally got your kids to eat vegetables, that
killer zucchini bread all your college room mates thought totally
rocked, or your granny’s canned courgettes; I’m not too picky. I just need to start building up the data base so that I don’t end up with more than I can handle. In advance, I thank you from the bottom of my (and the rest of the family’s) heart, er,  stomach.

  1. my mom’s recipe:
    Zucchini Jam
    6 cups raw zucchini, ground or chopped fine
    6 cups sugar
    1/2 cup lemon juice
    1 cup crushed pineapple with juice
    6 oz. pkg. apricot or orange Jello

    Drain zucchini, boil until clear (about 6 minutes, watch carefully!). Add sugar, lemon juice and pineapple. Boil 6 minutes.
    Remove from heat and add Jello, stirring until dissolved. Seal in desired size containers.
